You’ve heard of damper. But have you ever heard of pizza damper? Try Joe’s awesome recipe!
Ingredients
- 2 cups self-raising flour
- 1 tablespoon of caster sugar
- A pinch of salt
- 60g butter, chopped
- 3/4 cup buttermilk
- 50g salami of your choice, finely chopped
- 1/3 cup grated pizza cheese
- 1/4 cup pitted and sliced Kalamata olives
- 2 tablespoon of fresh flat-leaf parsley, finely chopped
- Buttermilk for brushing
Method
- Preheat your fan-forced oven to 220 degrees Celsius. Line a baking tray with baking paper and place it on the top rack.
- Sift the flour into a bowl, and then add the sugar and salt. Using your fingertips, rub the butter into the flour mixture until the mixture resembles fine breadcrumbs.
- Add the salami, cheese, olives and parsley, and mix well.
- Make a well in the centre. Add the buttermilk. Using a butter knife, stir it until a sticky dough forms. Turn the mixture out onto a lightly-floured surface. Gently knead until the dough becomes smooth.
- Using your hands, form the dough into a 20cm disc. Pat with your hands to flatten slightly. Place on a prepared tray. Using a sharp knife, cut into eight wedges, but don’t cut all the way through.
- Bake for 20 to 25 minutes. Serve and enjoy!
