Ingredients
- 1 can of salmon
- Half a cup of Panko bread crumbs
- Half a red onion, finely chopped
- 1 large egg or 2 small ones
- Chopped chives
- A pinch of salt
Sauce
- Mayo
- Lemon juice
- Fresh dill, finely chopped
Method
- Place the salmon in a bowl and remove any bones from the centre.
- Then, flake the salmon and add the rest of the ingredients, leaving some bread crumbs for coating the patties. Mix until it has the consistency of mince meat.
- Wet your hands and mould the mixture into small to medium-sized patties before coating each side in bread crumbs. Set aside.
- Now it’s time to make the sauce. Mix some mayonnaise with the juice of a lemon and add finely-chopped dill.
- Fry the patties on a medium heat until golden brown on each side. Serve with a salad and pour the mayo dressing on top! Easy!
