JD’s Big Breakfast!

I love this recipe because it’s an easy one-pan dish combining some of your favourite hearty breakfast ingredients!

Ingredients

  • 2 cans of cannellini beans
  • 1 jar of passata
  • 1 onion
  • 1 red capsicum
  • 250g of bacon
  • 4-6 eggs
  • 1 teaspoon of garlic
  • 1 teaspoon of cumin
  • 1 teaspoon of oregano
  • An optional splash of Tabasco sauce
  • Olive oil
  • Salt and pepper

Method

  1. Chop the onions, bacon and capsicum.
  2. Fry in olive oil, adding the garlic, herbs and spices, and then cook until the onion has softened.
  3. Drain the cannelloni beans and add them to the pan.
  4. Pour in the passata and stir.
  5. Simmer until the sauce is a nice, thick consistency (about 5-8 minutes).
  6. Bring the temperature down to minimum and make a small well in the bean mix, and then crack an egg into each hole.
  7. Put the lid on the frying pan and cook until the eggs are done to your liking. Add Tabasco sauce and garnish with parsley if you wish.
  8. Serve with a nice, crusty bread!
