I love this recipe because it’s an easy one-pan dish combining some of your favourite hearty breakfast ingredients!
Ingredients
- 2 cans of cannellini beans
- 1 jar of passata
- 1 onion
- 1 red capsicum
- 250g of bacon
- 4-6 eggs
- 1 teaspoon of garlic
- 1 teaspoon of cumin
- 1 teaspoon of oregano
- An optional splash of Tabasco sauce
- Olive oil
- Salt and pepper
Method
- Chop the onions, bacon and capsicum.
- Fry in olive oil, adding the garlic, herbs and spices, and then cook until the onion has softened.
- Drain the cannelloni beans and add them to the pan.
- Pour in the passata and stir.
- Simmer until the sauce is a nice, thick consistency (about 5-8 minutes).
- Bring the temperature down to minimum and make a small well in the bean mix, and then crack an egg into each hole.
- Put the lid on the frying pan and cook until the eggs are done to your liking. Add Tabasco sauce and garnish with parsley if you wish.
- Serve with a nice, crusty bread!
