Nuts for Satay Chicken!

Ingredients

  • 500gm of chicken thighs
  • 1 onion
  • 1/3 cup peanut butter
  • 1/4 cup of soy sauce
  • 1/4 cup of lemon juice
  • 1/2 cup stock
  • 1tbs of curry powder
  • 1tsp of garlic
  • A small tub of plain yogurt
  • 1 cup of chopped green beans
  • Rice

Method

  1. In a bowl, mix the curry powder, garlic, peanut butter, soy sauce and lemon juice, adding a bit of stock at a time so that it makes a runny sauce.
  2. Chop the onion and cut the chicken into pieces. Then, you can fry the onion, stirring for a couple of minutes, before adding the chicken and stirring until the chicken starts to brown.
  3. Add the sauce mixture and continue to stir. Leave it to simmer for a few minutes, stirring occasionally. Add beans and yogurt and stir through. Leave to simmer for a few minutes, until the sauce has a nice consistency.
  4. Serve with steamed rice. If you like, you could garnish this dish with a few green beans and some roasted peanuts. Enjoy!
