Ingredients
- 500gm of chicken thighs
- 1 onion
- 1/3 cup peanut butter
- 1/4 cup of soy sauce
- 1/4 cup of lemon juice
- 1/2 cup stock
- 1tbs of curry powder
- 1tsp of garlic
- A small tub of plain yogurt
- 1 cup of chopped green beans
- Rice
Method
- In a bowl, mix the curry powder, garlic, peanut butter, soy sauce and lemon juice, adding a bit of stock at a time so that it makes a runny sauce.
- Chop the onion and cut the chicken into pieces. Then, you can fry the onion, stirring for a couple of minutes, before adding the chicken and stirring until the chicken starts to brown.
- Add the sauce mixture and continue to stir. Leave it to simmer for a few minutes, stirring occasionally. Add beans and yogurt and stir through. Leave to simmer for a few minutes, until the sauce has a nice consistency.
- Serve with steamed rice. If you like, you could garnish this dish with a few green beans and some roasted peanuts. Enjoy!
