Ingredients
- 2 chorizos
- 2 dozen peeled prawns
- 1 red onion
- 1 small capsicum
- 1/2 cup frozen peas
- 1 1/2 cups of short grain rice
- 2 cups of stock/water
- 2 tablespoons of tomato paste
- 1 teaspoon of garlic
- 1 teaspoon of turmeric
- 1 teaspoon of sweet paprika
- Olive oil
- Salt/pepper
Method
- Splash a generous amount of olive oil in a large frypan. Fry the spices and garlic for a minute, add the onion and chorizo, and continue to fry for a couple more minutes before adding the capsicum, peas and rice.
- Continue stirring until the rice is translucent. Add the tomato paste and stock, stir and bring to the boil. Add salt and pepper.
- Reduce the heat to a low setting and add the prawns. Give it all one last stir, and then place the lid on the pan and cook for 15 minutes. Taste the rice; if not cooked, leave it for another five minutes. Stir and garnish with chopped parsley, and serve. Magnifico!
