Try JD’s honey soy chicken tortillas with fresh lime salsa, and thank us later.
This is one of my fave recipes. It’s not a standard fajita or taco but rather a fusion of Mexican and Asian flavours.
They are fresh, tangy, light and tasty, and I recommend you try them as they are. But of course you can add some of your favourite traditional toppings like cheese, sour cream and guacamole if you wish.
Ingredients
- 6 flour tortillas
- 2 chicken breasts
- 1 teaspoon of minced garlic
- 1 teaspoon of coriander powder
- 2 limes (1 for marinade and 1 for salsa)
- 4 tablespoons of soy sauce
- 2 tablespoons of honey
- 1 small green chilli
Salsa
- 1 yellow capsicum
- 2 medium tomatoes
- 1 small cucumber
- 1 small red onion
- 1 packet of rocket
- Olive oil
- Salt and pepper
Method
- Combine the soy sauce, honey, spices, garlic and the juice of one lime in a bowl and stir.
- Cut the chicken into strips and slice the chilli finely.
- Add the chicken and chilli into the honey and soy marinade.
- Cut the red onion finely, dice the tomatoes, capsicum and cucumber into small cubes, and place in a bowl with a pinch of salt and the juice of the other lime, and stir.
- Pour some olive oil into a pan and, when hot, add the chilli and the chicken strips.
- When the chicken has browned, pour in the rest of the marinade and leave to simmer on a low heat for five minutes.
- In another pan, we’re going to warm our tortillas. This method makes them less doughy and floury. Just add one for 30 seconds on a med-high heat and rotate the tortillas. This will keep them warm.
- It’s time to make our tortilla wraps. Add the chicken mixture to a tortilla with some rocket and the fresh salsa. Wrap and go!
